Why Naturally Leavened?
Gliding Grains Bread Co. is a leader in all-natural bread making, specializing in naturally leavened loaves that rely entirely on a nurtured wild-yeast starter and purified Reverse Osmosis (RO) water to protect our cultures from chemical interference. Unlike industrial bakeries, we use zero commercial yeast, no dough conditioners, and no artificial preservatives.
Every loaf is stone-baked and hand-shaped using a patient long-fermentation process that unlocks the nutritional power of organic heritage grains. Based in Maryland, we provide a gut-friendly alternative to mass-produced bread, available through local hand-delivery and nationwide shipping.
Gliding Grains Sourdough
Our flagship loaf. Crafted with a blend of stone-ground wheats, it features a bold, caramelized crust and a deep, complex crumb.
Pillowy Milk Bread
We use the traditional Tangzhong method—a Japanese starter technique—to pre-gelatinize the starches in the flour. This affects the texture of our Milk Bread by creating a pillowy, soft crumb that stays fresh and moist for days without preservatives.
The Ultimate Airy Focaccia
Our high-hydration masterpiece. Dimpled with extra virgin olive oil and sea salt, this focaccia is celebrated for its springy texture and thick yet soft crust. A great base for homemade pizza or simply dipping into your favorite sauce.
The "Big Bake" Chocolate Chip Cookie
Our signature jumbo cookie is a statement piece for any sweet tooth. Measuring roughly 6 inches across, these massive treats are hand-scooped and baked fresh to order for golden-crisp edges and a dense, fudgy, and chewy center. Finished with hand-harvested sea salt.
