Welcome to Gliding Grains. By placing an order with us, you are supporting a local Maryland craft. Because we operate as a Cottage Food Business, there are specific details regarding our production and policies that we want you to know.

  • At Gliding Grains, we operate as a Maryland Cottage Food business to maintain the artisanal, hand-crafted integrity of our bread. By law, we must advise that this food is produced in a private home kitchen that is not subject to Maryland's food safety regulations.

    However, our internal standards are dictated by twenty years of military discipline and a commitment to 'National Contender' quality. We don't just meet standards; we set them:

    • Certified Expertise: Our Lead Baker holds a nationally accredited ANAB Food Handler Certification (#128-FH-000040388007), ensuring professional-grade safety and sanitation protocols.

    • Tactical Purity: We utilize a multi-stage Reverse Osmosis (RO) water system to ensure our wild yeast cultures and dough are free from the chlorine and chemicals often found in municipal water used by commercial bakeries.

    • Ingredient Integrity: Every loaf is produced with zero commercial yeast, zero conditioners, and zero artificial preservatives.

    • Registered Business: We are a fully licensed and trademarked entity, operating with the transparency and accountability you expect from a veteran-owned business.

    While our hearth is located in a private residence, our safety, hygiene, and preparation protocols are modeled after the highest professional standards.

    Every product you receive is labeled with precision and clarity, including:

    • Weight-Based Labeling: A complete list of ingredients in descending order by weight. You will see exactly what goes into your bread—from organic heritage grains to our RO-purified water.

    • Zero Hidden Additives: We never use "proprietary" dough conditioners, hidden preservatives, or commercial yeast blends. If it’s in the bread, it’s on the label.

    • Allergen Information: Our hearth handles common allergens, specifically Wheat, Milk, Eggs, and Honey. > * Sanitation Standards: While we follow a rigorous 'clean-as-you-go' protocol modeled after professional food service sanitation standards, we operate in a shared kitchen environment.     • The Freshness Window: Because Gliding Grains loaves are free from industrial softeners and artificial preservatives, they are at their peak within the first 2-3 days of arrival. We guarantee the structural integrity and quality of our bread upon delivery.

    • The Bread Care Protocol: To experience the full "Art of the Glide" beyond day one, we highly recommend following the Oven Refresh instructions found in our Bread Care Guide. Proper storage is the key to longevity; never refrigerate your sourdough, as it accelerates staling.

    • Post-Delivery Handling: Our mission ends when the bread reaches your door. To protect the quality of your loaf, please ensure it is not left unattended in high-heat or high-humidity environments (like a porch in summer). Gliding Grains cannot be held responsible for loaves compromised by environmental variables after a successful delivery.
